- A Santoku is a general purpose chef knife commonly used in Japanese cooking. The name “Santoku” actually tells you what the knife is meant to do: dicing, slicing and mincing.
- This knife doesn’t rock like a Western chef knife but relies on a single downward motion for cutting. While this chef knife is a good general purpose knife, it’s particularly suited for thin, even cuts.
- Another feature of the Member’s Mark 7″ Santoku Knife DI knives are the indentations running down each side of the blade.
- These Granton edges prevent the knife from sticking to the material it’s cutting because the pockets allow some air between it and the surface of the blade. They also create a space where juices can flow when you’re cutting meat for more precise cuts.
